PAYING HOMAGE TO THE MONTREAL CRAFT COFFEE MOVEMENT
Full bodied, but still an impeccably clean and sweet tasting coffee produced through a well honed Ethiopia natural process.
The Myriade Special comes from Heleanna Georgalis’ farm, Kawo Kamina, located in the Sheka/Masha Woreda and in Kawo Kebele town. Heleanna is the producer and exporter for this coffee and her farm is located at 2100 meters above sea level. There is a river that separates Sheka from the Kaffa woreda, running through this farm and is the coffee’s water source.
The varieties of this coffee are mixed, as Heleanna obtained the farm almost fully planted from the previous owner. However, all the varieties they selected came from the Djimmah Research Centre, which is one of Ethiopia’s top coffee research sites.
This microlot was prepared by a barista who is a French Brewer's Cup champion, Pierre le Chanterac. Pierre did a process whereby the coffee was fermented in tanks for a full day, then pulped and washed with fresh, cold spring water, and dried on raised African beds. Heleanna is not sure why, but Pierre's coffee ended up much sweeter than all her other experiments, even though the Sugar level (BRICS) was as high as all the other lots.
For a natural, it’s one of the cleanest we’ve ever had. Naturals typically carry with them a very high body, sometimes with the drawback of very fermenty, dirty flavors. This coffee carries with it all the benefits of a natural - high body, fruity - with none of these drawbacks. You can have your cake and eat it too.
We ship every Monday morning, so if you get your order in by Friday you'll receive it the following week. Batch orders then roast, pack and ship Friday to Sunday, mail out Monday morning to ensure freshness.
Quebec: Coffee will be delivered 1-2 business days after it's shipped on Monday.
Ontario: Coffee will be delivered 2-3 business days after it's shipped on Monday.

A: This coffee is built for pour overs. We recommend 1 gram of coffee for every 15-16 grams of water, brewed at 95C/203F.
If you’re in the mood for an explosive and juicy espresso, we recommend 18 grams of ground coffee, for 25 grams of output, brewed in 25 seconds, at a temperature of 90.5C/195F.
